My passion towards Cooking

I have been  cooking  since 2003 after my wedding.I was like a normal girl who got married and went to the US leaving my parents for the first time.Obviously new place,new weather and to be frank cooking has never been my passion.But lately, I  decided to learn the art of cooking with love and voila everyday has been a new day with different recipes. I Learnt so many recipes thru' various books,TV shows,many from my mom's kitchen and some from my chithi's (mom's sister) simple yet delicious recipes.
After all the experiment,the moment when my hubby ,my parents,my son n my friends say "Its awesome" ,that's when I Feel the best Award of all.I'm sharing some of the simple vegetarian recipes for beginners /Bachelors and ideas for food lovers,lunch box ideas and much more to keep you involved.

Vegetable Bruschetta

Vegetable Bruschetta








Ingredients:
Baguette - 1
Diced Tomato,onions,capsicum - 2 cups
Peeled Garlic - 2 pods
Extra Virgin olive oil - 2 tbsp
White Vinegar - 1 tsp
Fresh or dried Basil leaves
Oregano - 1tsp
Salt - as required.


Method:

1. Take a bowl and toss it with tomato,onions,capsicums with olive oil salt,vinegar,oregano and basil and let it sit for 10 min.
2.Cut the baguette diagonally  about 1/2 inch thickness and toast it in a tawa till both the sides are golden brown.
3.Once toasted crisp, rub one side of the garlic in the slices and drizzle half a teaspoon of olive oil on each slice.  This is the more traditional method of making bruschetta. 
4.Spread the mixture on each slice and top it up with parmesan cheese(optional) and serve hot.

PS:1. Add this mixture to the slice just before serving or else the slices may become soggy.
      2.  You can also bake the slices in the top rack of your oven for 6-8 min or until it turns golden brown.
      3. While rubbing garlic, u can also run tomatoes for a tangy taste.
